Ingredients

  • 3 Zucchini ( medium size )

  • 4 CUPS Cold Water

  • 1 pinch Salt

  • 1 pinch Pepper

  • 1 TBS Italian Dado or Miso (home made )

  • 1 TBS Pumpkin Seeds (optional )

Directions

  • Cut the zucchini in rounds put them in a pot and cover with water . I add italian dado(homemade ) to give it an extra salty flavour but you can add salt or miso paste .
  • Cook until the zucchini are soft
  • Using a mixer blend well , adjust salt and pepper
  • For extra creaminess or extra Healthy fats for your brain you can add 1/2 avocado and blend well .
  • Pour the soup in bowl and garnish with Pumpkin seeds ( extra minerals for your health )
