4 Cup Cold Water
4/5 Inch Dried Kombu
1 TBS Spring Onion (optional )
1 Cup Bonito Flakes
1 Pack Tofu cut in squares (optional)
Directions
- Let the Dried Kombu steep in 4 cups of cold water for at least 4 – 5 hours ( I do it overnight )
- After that pour the water and kombu in a pot and on low heat cook for 10 minutes
- If foam forms remove it with a spoon and discard
- After 10 minutes of cooking remove the Kombu and add the Bonito flakes .
- Bring back to a boil always on low heat . When boiling , turn off the gas or stove and let the bonito sink to the bottom of the pot .
- Once they reach the botto the broth (dashi ) is ready . Wait a while before adding the miso paste ( you don’t want to destroy the live culture ) . After that you serve it as it is , add finely chopped spring onion or add tofu cut in squares

- 🍜This warming, nutrient-dense blend is rich in natural probiotics and fermented goodness to nourish your microbiome, aid digestion, and reduce bloating.
- By strengthening your gut, you enhance your body’s natural defenses, restore internal balance, and feel more energized and resilient every day.
- Heal your gut. Strengthen immunity. Fuel your core.
- NOTE : it preserves well in the fridge in an air tight container to up to a week . I love using it as a base for other soups or noodle night 🍜
