Zucchini Smooth Soup: Nourish & Restore

3 – Zucchini ( medium size )
4 CUPS Cold Water
1 pinch Salt
1 pinch Pepper
1 TBS Italian Dado or Miso (home made )
1 TBS Pumpkin Seeds (optional )
Directions
- Cut the zucchini in rounds put them in a pot and cover with water . I add italian dado(homemade ) to give it an extra salty flavour but you can add salt or miso paste .
- Cook until the zucchini are soft
- Using a mixer blend well , adjust salt and pepper
- For extra creaminess or extra Healthy fats for your brain you can add 1/2 avocado and blend well .
- Pour the soup in bowl and garnish with Pumpkin seeds ( extra minerals for your health )
